I have a 57 98. Is it correct to read the dipstick level with the engine running and trans in park?

Not familiar with your car specifically, but assuming you're talking about the transmission fluid level, yes, that is the generally accepted method for checking the level. Let it warm up a few minutes to operating temperatures, or drive it around a bit first, then check on level ground with engine running in park (or sometimes specs may specify neutral instead of Park).

I can't recall specifically where I read it, but there were some of those cars back in those days had you block the wheels and check it in drive. But I don't know if I'm misremembering something.

Your owner's manual and/or chassis service manual for your car is the best way to verify general maintenance checks that you can do.
